The LATCH® 4 is a user friendly patented attachment system designed for easy and secure installation of the Alto-Shaam® line of rotisserie ovens. Since the first LATCH was designed for the SITRANS® CX600 rotisserie conveyor oven, it has become a standard in rotisserie equipment. The design works with most gas, electric, induction and radiant electric ovens.

The LATCH for ALTO-SHAAM is the perfect accessory for when you use your ALTO-SHAAM holding oven with a stand. This simple addition to your ALTO-SHAAM allows you to save space by not having to pick up the lid of your holding oven every time you want to pour food. It also works as a spring clamp, which can be used without attaching it to the ALTO-SHAAM.

Our LATCH system securely secures the cooking pan into a specially designed locking device that works in conjunction with existing Alto-Shaam cookers. It comes with everything you need to easily install and use the system for your product.

The LATCH sensor integrates with your Alto-Shaam grill to automatically control the lid. This patented technology automatically monitors and reacts to changes in cooking surface temperatures, reducing cycling and controlling the temperature of the food more efficiently than would be achieved with a manual or any form of conventional lid open/closing controller. The LATCH system offers a faster ramping rate for increased control of cook time, reduced energy consumption, and improved food quality.
