The cook control is a direct acting commercial grade thermostat that limits the flow of electric current between an appliance and the electrical power supply when the temperature of the food being cooked exceeds a predetermined value. The internal components are housed in an aluminum case with a protective steel cover which provides for high heat resistance. The Auto-Lock™ 200-400 Temperature Control - KX-87-36 - is a direct acting, direct reading temperature control that provides substantial safety advantages over mechanical controls. The electrical components are enclosed, and the unit is hermetically sealed against the ingress of air or water. The switching mechanism automatically locks the setting in place at any desired temperature. The basic control incorporates a built-in non-detachable temperature limit switch designed to prevent motor damage by automatically de-energizing the control and stopping the motor if the set temperature is exceeded.
